1 ½ cups rolled oats

1 cup fresh or frozen strawberries, diced

¼ cup chia seeds

½ cup almond milk (or any milk of your choice)

¼ cup honey or maple syrup

1 teaspoon vanilla extract

½ teaspoon cinnamon

¼ teaspoon salt

1 tablespoon coconut oil (for greasing)

Optional: ¼ cup chopped nuts or dark chocolate chips

Instructions
 

Prepare the Strawberries: If using frozen strawberries, thaw them slightly and chop them into small pieces. If using fresh, rinse and chop them up.

    Mix Wet Ingredients: In a large bowl, add almond milk, honey (or maple syrup), and vanilla extract. Stir well to combine.

      Combine Dry Ingredients: In another bowl, mix the rolled oats, chia seeds, cinnamon, and salt.

        Combine Both Mixtures: Gradually add the dry mixture to the wet ingredients, stirring until everything is well incorporated. Fold in the diced strawberries and any optional ingredients like nuts or chocolate chips.

          Chill the Mixture: Cover the bowl with plastic wrap and let the mixture sit in the refrigerator for at least 30 minutes. This allows the chia seeds to absorb some liquid and the mixture to thicken.

            Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Lightly grease it with coconut oil.

              Shape the Coins: Using your hands or a cookie scoop, take small portions of the mixture and form them into coins (about 2 inches in diameter) and place them on the prepared baking sheet.

                Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the edges are golden and the coins are firm to the touch.
