2 cups fresh or frozen raspberries

1 cup Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 cup almond flour or graham cracker crumbs

1/4 cup melted coconut oil or unsalted butter

A pinch of salt

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Crust:

    - In a mixing bowl, combine the almond flour (or graham cracker crumbs) with melted coconut oil (or butter) and a pinch of salt. Mix until well combined and crumbly.

      - Press the mixture firmly into the bottom of a tart pan or individual tartlet molds to create a uniform crust. Chill in the freezer while you prepare the filling.

        Make the Raspberry Yogurt Filling:

          - If using frozen raspberries, thaw them slightly before blending. In a blender or food processor, combine the raspberries, Greek yogurt, honey (or maple syrup), and vanilla extract.
