2 cups fresh pineapple chunks (about 1 medium pineapple)

1 cup full-fat coconut milk

1 tablespoon honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 cup shredded unsweetened coconut

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Pineapple: Start by peeling, coring, and chopping the pineapple into small chunks. If you’re using canned pineapple, make sure it's in juice and not syrup, and drain it well.

    Blend the Mixture: In a blender, combine the fresh pineapple chunks, coconut milk, honey or maple syrup, vanilla extract, and sea salt. Blend on high until the mixture is smooth and creamy.

      Mix in Coconut Flakes: Pour the blended mixture into a mixing bowl and stir in the shredded coconut until well combined.

        Pour into Cups: Find small cups or molds suitable for freezing (ice cube trays or silicone muffin tins work well). Carefully pour the pineapple-coconut mixture into each cup, filling them about three-quarters full.

          Freeze: Place the filled cups in the freezer and allow them to freeze for at least 4 hours or until solid.

            Remove from Molds: Once frozen, remove the cups from the molds by gently squeezing or running warm water over the outside of the mold for a few seconds.
