4 ripe peaches, peeled and sliced

1/2 cup granulated sugar

1/2 cup water

1 tablespoon lemon juice

Pinch of salt

Fresh mint leaves for garnish (optional)

Prepare the Peaches: If you haven’t done so yet, peel the peaches and slice them into wedges. Remove any pits.

    Make the Simple Syrup: In a small saucepan, combine the water and granulated sugar. Heat over medium heat, stirring occasionally, until the sugar has fully dissolved. Remove from heat and allow to cool.

      Blend the Mixture: In a blender or food processor, combine the sliced peaches, cooled simple syrup, lemon juice, and a pinch of salt. Blend until smooth, creating a silky peach puree.

        Taste and Adjust: Taste the peach puree. If you prefer it sweeter, you can add a little more sugar and blend again. Remember, the sweetness will be a bit muted once frozen.

          Chill the Mixture: Transfer the peach mixture to a bowl and refrigerate for about 1 hour to allow it to chill thoroughly.

            Freeze the Sorbet: Pour the chilled peach mixture into an ice cream maker and churn according to the manufacturer's instructions. This typically takes about 20-25 minutes. If you don’t have an ice cream maker, you can pour the mixture into a shallow dish and freeze it, occasionally stirring every 30 minutes for about 3-4 hours to break up any ice crystals until the sorbet is smooth and creamy.

              Serve: Once the sorbet has reached the desired consistency, scoop it into bowls or cones. Garnish with fresh mint leaves if desired. Enjoy immediately or transfer to an airtight container and store in the freezer for later.
