Frozen Mocha Protein Pudding Pops

Ingredients
  

2 cups unsweetened almond milk (or any milk of choice)

1 cup Greek yogurt (vanilla or plain)

1/2 cup chocolate protein powder

1/4 cup instant coffee granules

1/4 cup cocoa powder

1/4 cup maple syrup or honey (adjust to taste)

1 teaspoon vanilla extract

A pinch of sea salt

Optional toppings: crushed dark chocolate, cocoa nibs, or chopped nuts

Instructions
 

Blend the Base: In a blender, combine the almond milk, Greek yogurt, chocolate protein powder, instant coffee granules, cocoa powder, maple syrup (or honey), vanilla extract, and sea salt. Blend until smooth and well-mixed.

    Taste and Adjust: Give the mixture a taste. If you prefer a sweeter flavor, add a little more maple syrup or honey and blend again.

      Prepare the Molds: Pour the mocha protein mixture into popsicle molds, leaving a little space at the top for expansion when freezing. If you want to add toppings, sprinkle a few crushed dark chocolate pieces, cocoa nibs, or nuts to each mold before filling them completely.

        Insert Sticks: If your molds don’t come with built-in sticks, insert wooden popsicle sticks into the center of each filled mold.

          Freeze: Carefully place the molds in the freezer and allow them to freeze for at least 4-6 hours, or until completely solid. For best results, leave them overnight.

            Unmold and Enjoy: To release the pudding pops, run warm water over the outside of the molds for a few seconds. Gently pull on the sticks to remove the pops.

              Serve: Serve immediately as a cool, refreshing treat or store them in an airtight container in the freezer for up to one month.
