2 ripe mangoes, peeled and diced

2 cups Greek yogurt (plain or coconut-flavored)

¼ cup honey or agave syrup

1 teaspoon vanilla extract

2 cups granola or your favorite cereal

½ cup shredded coconut (optional)

Fresh mint leaves for garnish (optional)

Prepare the Mango Puree: In a blender, combine the diced mangoes, honey (or agave syrup), and vanilla extract. Blend until smooth. If you prefer some texture, reserve a few small mango pieces to mix in later.

    Mix the Yogurt: In a separate bowl, combine the Greek yogurt with half of the mango puree. Stir well to create a lovely mango-yogurt blend. If you reserved the mango pieces, fold them into the yogurt mixture now.

      Layer the Mixtures: Take a silicone muffin tray or silicone molds. Start by spooning about a tablespoon of the yogurt mixture into each mold. Follow this by adding a layer of granola or cereal (about one tablespoon), then top with a bit more of the yogurt mixture until reaching the top. Repeat until all ingredients are used, finishing with a layer of granola on top.

        Add Coconut (Optional): If using shredded coconut, sprinkle some on top of the granola layer for added texture and flavor.

          Freeze: Place the filled molds in the freezer for at least 4-6 hours or until completely frozen.

            Serve: Once frozen, carefully pop the cereal rounds out of the molds. Serve immediately or store them in an airtight container in the freezer for future snacking.

              Garnish: Optional — drizzle remaining mango puree on top and garnish with fresh mint leaves before serving for an elegant touch.
