2 ripe mangoes, peeled and diced

1 cup coconut milk (full-fat for creaminess)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 tablespoon fresh lime juice

1/2 teaspoon vanilla extract

Pinch of sea salt

Optional garnish: unsweetened shredded coconut or lime zest

Prepare the Mango: Start by peeling and cutting the ripe mangoes into cubes. Ensure they are sweet and juicy for the best flavor.

    Make Coconut Mixture: In a blender, combine the coconut milk, honey or maple syrup, fresh lime juice, vanilla extract, and a pinch of sea salt. Blend until smooth and creamy.

      Combine Ingredients: Add the diced mango to the blender with the coconut mixture. Pulse a few times to break up the mango chunks, but leave some pieces for texture.

        Pour and Fill: Pour the mixture into ice cube trays or silicone molds, filling each section about three-quarters full. If desired, sprinkle a little unsweetened shredded coconut or lime zest on top for added flavor.

          Freeze: Place the filled trays in the freezer for at least 4 hours, or until completely solid.
