Frozen Lemon Cheesecake Yogurt Cups

Ingredients
  

1 cup plain Greek yogurt

8 oz cream cheese, softened

1/2 cup honey or maple syrup

1/4 cup freshly squeezed lemon juice

Zest of 2 lemons

1 teaspoon vanilla extract

1/2 cup crushed graham crackers

Fresh berries (strawberries, blueberries, or raspberries) for topping

Optional: Mint leaves for garnish

Instructions
 

In a mixing bowl, combine the softened cream cheese and Greek yogurt. Beat together with an electric mixer until smooth and creamy.

    Add honey or maple syrup, lemon juice, lemon zest, and vanilla extract to the mixture. Continue to beat until all ingredients are fully incorporated and the mixture is fluffy.

      Prepare eight 4 oz dessert cups and evenly distribute half of the cheesecake yogurt mixture into each cup.

        Sprinkle a layer of crushed graham crackers over the yogurt mixture in each cup. Add the remaining cheesecake yogurt mixture on top of the graham cracker layer.

          Cover each cup with plastic wrap or a lid and place them in the freezer for at least 4 hours, or until fully frozen.

            To serve, remove from the freezer and allow to soften for about 5 minutes before enjoying. Top each cup with fresh berries and optional mint leaves for garnish.
