Zest of 2 limes

1 teaspoon vanilla extract

1/2 cup unsweetened shredded coconut (toasted)

Prepare the crust: Preheat your oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, shredded coconut, granulated sugar, and melted butter until fully combined. Press the mixture firmly into the bottom of an 8x8-inch (20x20 cm) baking dish to form an even layer.

    Bake the crust: Place the crust in the preheated oven and bake for 10-12 minutes, or until it is lightly golden. Remove from the oven and let it cool completely while you prepare the filling.

      Make the filling: In a large mixing bowl, combine the coconut milk, sweetened condensed milk, lime juice, lime zest, vanilla extract, and salt. If you prefer a thicker filling, mix the cornstarch in a small bowl with a tablespoon of lime juice, then whisk it into the filling mixture until smooth.

        Pour the filling: Once the crust is cool, pour the filling evenly over the cooled crust. Using a spatula, gently spread it to the edges to ensure even distribution.
