1 cup grated carrots (about 2 medium carrots)

1 cup nuts (walnuts or pecans, chopped)

½ cup shredded coconut (unsweetened)

½ cup almond butter or peanut butter

¼ cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon ground ginger

¼ teaspoon nutmeg

¼ teaspoon salt

⅓ cup raisins or dried cranberries (optional)

⅓ cup mini chocolate chips (optional)

Instructions
 

Prepare the Pan: Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later. Set aside.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, grated carrots, chopped nuts, shredded coconut, cinnamon, ginger, nutmeg, and salt. Stir well to ensure that everything is evenly distributed.

      Combine Wet Ingredients: In a separate bowl, mix together the almond or peanut butter, honey (or maple syrup), and vanilla extract until smooth.
