Ingredients

2 cups plain Greek yogurt

2 medium apples (Granny Smith or Honeycrisp)

1/2 cup caramel sauce (store-bought or homemade)

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

1/4 cup chopped nuts (like pecans or walnuts), optional

1/4 cup mini chocolate chips, optional

Instructions

Prepare the Apples:

    - Wash and core the apples, then cut them into small, bite-sized cubes.

      - Drizzle the lemon juice over the apple cubes to prevent browning and toss to coat.

        Make the Yogurt Mixture:

          - In a mixing bowl, combine the Greek yogurt, vanilla extract, and ground cinnamon, mixing until smooth and well combined.

            Incorporate Caramel:

              - Gently fold in about 1/4 cup of the caramel sauce into the yogurt mixture, leaving the remaining sauce for drizzling later.

                Combine Fruits and Yogurt:

                  - Carefully add the apple cubes to the yogurt mixture, ensuring the apples are well-coated. If desired, mix in the chopped nuts and mini chocolate chips at this stage.

                    Prepare the Freezer Tray:

                      - Line a mini muffin tin or silicone mold with cupcake liners or lightly spray with non-stick cooking spray.

                        Fill the Molds:

                          - Spoon the yogurt-apple mixture into the molds or muffin tin, filling them to the top.

                            Freeze:

                              - Place the tray in the freezer for about 2-3 hours or until completely frozen.

                                Serve:

                                  - Once frozen, pop the yogurt bites out of the molds and arrange them on a serving platter. Drizzle the remaining caramel sauce over the top for added sweetness.

                                    Storage:

                                      - Store any leftovers in an airtight container in the freezer for up to 2 weeks.
