Frozen Blueberry Lemon Crumble Bites

For the Crust:

1 cup almond flour

1/4 cup coconut oil, melted

3 tablespoons maple syrup

1/2 teaspoon vanilla extract

Pinch of salt

For the Filling:

2 cups frozen blueberries

1 tablespoon lemon juice

Zest of 1 lemon

2 tablespoons honey or agave syrup

1 tablespoon cornstarch

For the Topping:

1/2 cup rolled oats

1/4 cup almond flour

2 tablespoons brown sugar

1/2 teaspoon cinnamon

2 tablespoons coconut oil, melted

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium-sized bowl, combine almond flour, melted coconut oil, maple syrup, vanilla extract, and a pinch of salt. Mix well until a crumbly dough forms.

        - Press the dough evenly into the bottom of a lined mini muffin tin to create a crust. Bake for 10-12 minutes until lightly golden. Remove from oven and let cool.

          Make the Filling:

            - In a saucepan over medium heat, combine the frozen blueberries, lemon juice, lemon zest, honey (or agave syrup), and cornstarch. Cook for 5-7 minutes, stirring gently until the blueberries release their juices and the mixture thickens slightly. Remove from heat and let cool.

              Prepare the Topping:

                - In a separate bowl, mix together the rolled oats, almond flour, brown sugar, cinnamon, and melted coconut oil. The mixture should be crumbly.

                  Assemble the Bites:

                    - Spoon a generous amount of the blueberry filling into each cooled crust, filling them to the top. Then, sprinkle a layer of the oat crumble mixture over each filled crust.

                      Freeze:

                        - Place the assembled bites in the freezer for at least 1-2 hours until solid.

                          Serve:
