1 cup almond flour

1/2 cup coconut flour

1/4 cup maple syrup (or honey)

1/2 teaspoon baking powder

1/4 teaspoon salt

Zest of 1 lemon

1/4 cup fresh lemon juice

1 cup fresh or frozen blueberries

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

Optional: powdered sugar for dusting

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large bowl, whisk together the almond flour, coconut flour, baking powder, and salt until well combined.

      Combine Wet Ingredients: In a separate bowl, combine the melted coconut oil, maple syrup, lemon juice, lemon zest, and vanilla extract. Mix until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries, being careful not to mash them.

          Form Cookie Bites: Using a tablespoon, scoop small amounts of dough onto the prepared baking sheet, leaving some space between each scoop as they will spread slightly while baking.

            Bake: Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden and the centers are set. Keep an eye on them to avoid overbaking.

              Cool Down: Once baked, remove the cookie bites from the oven and allow them to cool on the baking sheet for about 10 minutes before transferring them to a wire rack to cool completely.

                Freeze: Once cooled, transfer the cookie bites to an airtight container in a single layer. Place them in the freezer for at least 2 hours or until completely frozen.

                  Serve: When ready to enjoy, take out a few cookie bites from the freezer, let them sit for a minute, and optionally dust with powdered sugar for an extra touch!
