To create the perfect strawberry layer for your frozen banana strawberry swirl pops, start by selecting ripe, fresh strawberries. Look for berries that are deep red, firm, and fragrant. Rinse them under cold water to remove any dirt, and then hull them by removing the green tops and white cores. This process not only enhances the flavor but also ensures a smooth texture in your pops.

Ingredients

2 ripe bananas

2 cups fresh strawberries, hulled

1/4 cup Greek yogurt (or dairy-free yogurt for a vegan option)

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 tablespoon fresh lemon juice

A pinch of salt

Instructions

Prepare the Strawberries:

    - In a blender or food processor, blend the hulled strawberries until smooth. If you like a bit of texture, pulse a few times instead of blending completely.

      Sweeten the Banana Mixture:

        - In a separate bowl, mash the bananas with a fork until smooth. Mix in the Greek yogurt, honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt until well combined. This will create a creamy banana base.

          Layer the Mixtures:

            - Take your pop molds and begin by pouring a layer of the banana mixture into the bottom of each mold (about 1/3 full). Next, add a layer of the strawberry puree on top of the banana mixture (about 1/3 full again). Repeat this process until the molds are filled, finishing with a layer of the strawberry puree.

              Swirl It Up:

                - Use a skewer or the handle of a spoon to gently swirl the banana and strawberry mixtures together. This will create a beautiful marbled effect.

                  Insert Sticks:

                    - If your pop molds have a stick holder, insert the sticks now. If not, you can wait until the mixture has partially frozen for about an hour and then insert the sticks.

                      Freeze:

                        - Place the molds in the freezer and let them freeze for at least 4-6 hours, or until completely solid.

                          Serve:

                            - Once frozen, remove the pops from the molds by running them under warm water for a few seconds to loosen. Enjoy your frozen banana strawberry swirl pops!
