Ingredients

For the Biscuit Bombs:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup granulated sugar

1/2 cup unsalted butter, cold and diced

3/4 cup buttermilk

1 cup fresh blueberries (or frozen, thawed and drained)

For the Frosting:

1 cup powdered sugar

2 tablespoons milk (more if needed for consistency)

1 teaspoon vanilla extract

Optional: Zest of 1 lemon for added flavor

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Make the Biscuit Dough:

      - In a large mixing bowl, whisk together the flour, baking powder, salt, and granulated sugar.

        - Add the cold diced butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

          - Pour in the buttermilk and mix gently until just combined. Fold in the blueberries, being careful not to overmix the dough.

            Form the Biscuit Bombs:

              - Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.

                - Roll the dough into a rectangle approximately 1 inch thick. Cut out circles using a biscuit cutter or a glass, about 3 inches in diameter.

                  - Place about a tablespoon of blueberries in the center of each circle. Fold the dough over to encase the blueberries and pinch the edges to seal. Place the sealed biscuits on the prepared baking sheet seam-side down.

                    Bake:

                      - Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown. Remove from the oven and allow to cool slightly.

                        Prepare the Frosting:

                          - In a small bowl, whisk together the powdered sugar, milk, vanilla extract, and optional lemon zest until smooth.

                            - If the frosting is too thick, add a little more milk, one teaspoon at a time, until you achieve your desired consistency.

                              Frost the Biscuit Bombs:

                                - Once the biscuit bombs have cooled slightly, drizzle or spread the frosting over the tops. Allow the frosting to set for a couple of minutes before serving.

Serve and Enjoy: These Frosted Blueberry Biscuit Bombs are best enjoyed warm but can be stored in an airtight container for a few days.
