Fresh Tomato Tart

Ingredients
  

1 pre-made pie crust (store-bought or homemade)

4 large heirloom tomatoes, sliced (variety of colors if possible)

1 cup ricotta cheese

1 cup grated mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

2 tablespoons fresh basil, chopped

1 tablespoon fresh thyme leaves

1 tablespoon olive oil

Salt and pepper, to taste

1 tablespoon balsamic reduction (for drizzling, optional)

Instructions
 

Preheat and Prepare: Preheat your oven to 400°F (200°C). If using a homemade pie crust, roll it out and fit it into a tart pan. Trim any excess crust hanging over the edges.

    Blind Bake the Crust: Line the crust with parchment paper and fill with pie weights or dried beans. Bake the crust for about 10-15 minutes until lightly golden. Remove the parchment and weights, and bake for another 5 minutes. Let cool slightly.

      Prepare the Filling: In a mixing bowl, combine ricotta cheese, garlic, half of the grated mozzarella, half of the Parmesan, fresh basil, fresh thyme, salt, and pepper. Mix well until combined.

        Assemble the Tart: Spread the ricotta mixture evenly across the bottom of the pre-baked tart crust. Layer the sliced heirloom tomatoes on top in a circular pattern, overlapping slightly.

          Add Cheese and Seasoning: Sprinkle the remaining mozzarella and Parmesan on top of the tomatoes. Drizzle with olive oil and season with a pinch of salt and black pepper.

            Bake the Tart: Place the tart in the preheated oven and bake for 25-30 minutes, or until the tomatoes are slightly caramelized and the cheese is bubbly and golden.

              Finish and Serve: Once out of the oven, let the tart cool for about 10 minutes before slicing. Drizzle with balsamic reduction if desired, and garnish with extra fresh basil.
