Ingredients
  

2 cups fresh corn kernels (about 4 ears of corn)

1 medium jalapeño, seeds removed and finely diced

1/2 red onion, finely diced

1 cup cherry tomatoes, diced

1/2 cup fresh cilantro, chopped

Juice of 2 limes

1 tsp ground cumin

Salt and pepper to taste

1 package (15-20 count) mini phyllo cups or tortilla cups

1 avocado, diced (optional for topping)

Instructions
 

Prep the Corn: Start by shucking the corn and slicing off the kernels. You can also use fresh corn that is already cut or frozen corn that has been thawed for convenience.

    Mix the Salsa: In a large mixing bowl, combine the fresh corn kernels, diced jalapeño, red onion, cherry tomatoes, and chopped cilantro.

      Season It: Squeeze the juice of two limes over the mixture, then add the ground cumin, and season with salt and pepper to taste. Stir well to ensure all ingredients are coated evenly with lime juice and spices.

        Prepare the Cups: Arrange the mini phyllo or tortilla cups on a serving platter.

          Fill the Cups: Spoon a generous amount of the corn salsa into each cup. If you’d like, top each cup with a few diced avocado pieces for extra creaminess.
