8 oz (about 225g) of rotini or Fusilli pasta

1 pint (about 300g) cherry tomatoes, halved

8 oz (about 225g) fresh mozzarella balls (bocconcini), halved or quartered depending on size

1 cup (about 30g) fresh basil leaves, roughly torn

¼ cup (about 60ml) extra-virgin olive oil

2 tbsp balsamic vinegar

1 garlic clove, minced

Salt and pepper, to taste

Optional: 1 small avocado, diced

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water until well-cooled, then set aside.

    Prepare the Dressing: In a small bowl, whisk together the extra-virgin olive oil, balsamic vinegar, minced garlic, salt, and pepper. Taste and adjust the seasoning if needed.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, mozzarella balls, and torn basil leaves. If you’re adding avocado, gently fold it in here.

        Dress the Salad: Pour the dressing over the pasta mixture and toss gently until everything is well coated.

          Chill: Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld.
