Ingredients

1 medium cauliflower, cut into florets

1 cup all-purpose flour (or gluten-free flour)

1 cup water

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

1/2 cup buffalo hot sauce

8 small corn or flour tortillas

1 cup shredded red cabbage

1/4 cup fresh cilantro, chopped

1 ripe avocado

1/2 cup Greek yogurt or dairy-free yogurt

1 tablespoon lime juice

1 teaspoon cumin

Optional toppings: sliced radishes, lime wedges, extra hot sauce

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Prepare Cauliflower: In a large bowl, mix together the flour, water, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper until smooth. The batter should be thick enough to coat the cauliflower florets.

Coat Cauliflower: Dip each cauliflower floret into the batter, allowing excess batter to drip off, and place them in a single layer on the prepared baking sheet.

Bake Cauliflower: Bake in the preheated oven for about 20 minutes, or until the cauliflower is golden and crispy. Halfway through baking, remove the baking sheet and toss the cauliflower to ensure even cooking.

Buffalo Sauce Mix: After 20 minutes, remove the baking sheet and drizzle the buffalo hot sauce over the cauliflower. Toss gently to ensure each piece is coated. Return to the oven for an additional 10 minutes.

Make Creamy Avocado Sauce: While the cauliflower bakes, prepare the creamy avocado sauce. In a blender or food processor, combine the ripe avocado, Greek yogurt, lime juice, cumin, and a pinch of salt. Blend until smooth and creamy. Adjust seasoning if needed.

Warm Tortillas: In a skillet over medium heat, warm the tortillas for about 30 seconds on each side or until pliable.

Assemble Tacos: Once the cauliflower is done, remove it from the oven. To assemble the tacos, place a generous handful of shredded cabbage on each tortilla, add the crispy buffalo cauliflower, and drizzle with creamy avocado sauce. Top with fresh cilantro and any additional toppings like radishes or lime wedges.

Serve: Serve the tacos warm with extra hot sauce on the side for those who crave more heat!
