For the Buffalo Cauliflower:

1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or a gluten-free alternative)

1 cup cold water

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust for desired heat)

Salt and pepper to taste

½ cup buffalo sauce (plus extra for drizzling)

For the Tacos:

8 small corn tortillas (or flour tortillas, if preferred)

1 cup shredded green cabbage

½ cup diced tomatoes

½ cup diced red onion

½ cup avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Optional: Sour cream or dairy-free yogurt for a topping

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Prepare the Batter: In a large mixing bowl, whisk together the flour, cold water, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper until smooth.

      Coat the Cauliflower: Dip each cauliflower floret into the batter, allowing excess to drip off, then place them onto the prepared baking sheet in a single layer.

        Bake the Cauliflower: Bake the cauliflower in the preheated oven for about 20-25 minutes, or until golden and crispy, turning halfway through for even cooking.

          Add the Buffalo Sauce: Once baked, remove the cauliflower from the oven. Pour the buffalo sauce over the florets and toss gently to coat. Slide back into the oven and bake for an additional 10 minutes.

            Warm the Tortillas: While the cauliflower is finishing, heat a skillet over medium heat. Warm each tortilla for about 30 seconds on each side until soft and pliable.

              Assemble the Tacos: To assemble, place a generous handful of shredded cabbage on each tortilla, followed by the crispy buffalo cauliflower. Top with diced tomatoes, red onion, and avocado.

                Garnish and Serve: Drizzle with extra buffalo sauce if desired, add fresh cilantro, and a touch of lime juice. Serve with lime wedges and optional sour cream or yogurt on the side.
