1 cup orzo pasta

2 cups cherry tomatoes, halved

1 cup cucumber, diced

1 cup crumbled feta cheese

1/3 cup red onion, finely chopped

1/4 cup Kalamata olives, pitted and halved

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

Salt and pepper, to taste

Cook the Orzo: In a large pot of salted boiling water, add the orzo and cook according to package instructions until al dente, usually around 8-10 minutes. Drain and rinse with cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: While the orzo is cooking, prepare your vegetables. Halve the cherry tomatoes, dice the cucumber, and finely chop the red onion. Adjust the sizes as necessary for your preference.

      Mix the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.

        Assemble the Salad: In a large mixing bowl, combine the cooked orzo, halved cherry tomatoes, diced cucumber, crumbled feta cheese, chopped red onion, Kalamata olives, and fresh parsley.
