Ingredients

1 cup unsalted butter, softened

½ cup powdered sugar

1 teaspoon pure vanilla extract

2 cups all-purpose flour

½ teaspoon salt

½ cup maraschino cherries, drained and finely chopped

½ cup chopped pecans or walnuts (optional)

1 teaspoon almond extract (optional)

Red and green sprinkles (for decoration)

Instructions

Prepare the Dough: In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. Add the vanilla extract and almond extract (if using), mixing until well incorporated.

Combine Dry Ingredients: In a separate bowl, whisk together the flour and salt. Gradually add the flour mixture to the butter mixture, mixing until just combined.

Add Cherries and Nuts: Fold in the finely chopped maraschino cherries and the nuts (if using) until evenly distributed throughout the dough.

Shape the Cookies: Divide the dough in half and shape each half into a log about 2 inches in diameter. Wrap each log in parchment paper or plastic wrap and refrigerate for at least 2 hours, or until firm.

Preheat the Oven: When you’re ready to bake, preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Slice and Decorate: Remove the logs from the refrigerator and unwrap. Using a sharp knife, slice the logs into ¼-inch thick rounds. Place the cookies on the prepared baking sheet, spacing them about 1 inch apart. Sprinkle the tops with red and green sprinkles for a festive touch.

Bake: Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. The centers will remain soft but will firm up as they cool.

Cool and Serve: Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy these delightful shortbread cookies with a warm cup of tea or coffee during the festive season!
