Ingredients
  

  • 2.5 pounds pork loin
  • 1.0 cup fresh or frozen cranberries
  • 1.0 cup cranberry juice
  • 1.0 small onion, finely chopped
  • 2.0 cloves garlic, minced
  • 0.5 cup brown sugar
  • 2.0 tablespoons apple cider vinegar
  • 1.0 teaspoon dried rosemary
  • 1.0 teaspoon dried thyme
  • 0.0 to taste salt and pepper
  • 0.0 for garnish fresh parsley

Instructions
 

  • Prepare the Pork Loin: Start by patting the pork loin dry with paper towels. Season generously with salt and pepper on all sides.
  • Sear the Pork (Optional): In a skillet over medium-high heat, sear the pork loin for about 4-5 minutes on each side until golden brown. This step adds extra flavor but can be skipped if you’re short on time.
  • Combine Cranberry Sauce Ingredients: In a bowl, mix together the cranberries, cranberry juice, chopped onion, minced garlic, brown sugar, apple cider vinegar, rosemary, thyme, and a pinch of salt and pepper. Stir until everything is well combined.
  • Layer in the Crockpot: Place the seared (or raw) pork loin in the bottom of the crockpot. Pour the cranberry sauce mixture over the top, ensuring the pork is well-covered.
  • Cook on Low: Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the pork is tender and easily shreds with a fork.
  • Serve: Once cooked, remove the pork loin from the crockpot and let it rest for a few minutes. Slice the pork and spoon the cranberry sauce over the top. Garnish with fresh parsley if desired.
