2 cups cooked, shredded chicken (rotisserie chicken works great!)

1 cup bell peppers, diced (red, yellow, and green for color)

1 cup zucchini, grated

1 cup spinach, chopped

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper, to taste

4 large whole wheat or flour tortillas

Olive oil or cooking spray for cooking

Optional toppings: sour cream, salsa, guacamole, or avocado slices

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, diced bell peppers, grated zucchini, chopped spinach, corn, and shredded cheese. Sprinkle in the garlic powder, cumin, paprika, salt, and pepper. Mix until all ingredients are evenly combined.

    Assemble the Quesadillas: Lay one tortilla on a clean, flat surface. Spoon a generous portion of the chicken and veggie mixture onto half of the tortilla, leaving space around the edges. Fold the other half of the tortilla over the filling to create a half-moon shape. Repeat this process for the remaining tortillas.

      Cook the Quesadillas: Heat a large skillet or griddle over medium heat and lightly coat it with olive oil or cooking spray. Place one quesadilla in the skillet and cook for about 3-4 minutes until the underside is golden brown and crispy. Carefully flip it over and cook for another 3-4 minutes until the other side is likewise golden and the cheese is melted. Remove from the skillet and keep warm. Repeat with the remaining quesadillas.

        Slice and Serve: Once all quesadillas are cooked, slice them into wedges and serve warm with your choice of optional toppings, such as sour cream, salsa, guacamole, or avocado slices.
