Family-Friendly Beef and Cheese Enchiladas

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1 can (15 oz) refried beans

1 can (10 oz) red enchilada sauce

8 small flour tortillas

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup sour cream

Fresh cilantro for garnish (optional)

Sliced jalapeños for serving (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Cook the Beef Mixture: In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spatula. Drain any excess fat.

      Add Aromatics: Stir in the chopped onion and garlic into the beef. Sauté for 3-4 minutes until the onion becomes translucent.

        Season the Meat: Add chili powder, cumin, paprika, salt, and pepper to the skillet. Mix well and cook for another 2 minutes to allow the spices to bloom.

          Incorporate Beans: Add the refried beans into the beef mixture, stirring until combined and heated through. Remove from heat.

            Assemble the Enchiladas: To assemble, spread 1/4 cup of enchilada sauce on the bottom of a 9x13 inch baking dish. Take a tortilla, fill it with 1/4 cup of the beef and bean mixture, and top with a sprinkle of cheddar cheese (about 2 tablespoons). Roll up the tortilla and place seam-side down in the baking dish. Repeat with the remaining tortillas.

              Top the Enchiladas: Pour the remaining enchilada sauce evenly over the rolled tortillas. Sprinkle the remaining cheddar and Monterey Jack cheese on top.

                Bake: Cover the dish with aluminum foil (to prevent burning) and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and lightly golden.

                  Serve: Allow the enchiladas to cool for a few minutes once out of the oven. Serve with a dollop of sour cream and garnish with fresh cilantro and jalapeños if desired.
