2 lbs ground beef (preferably 80% lean)

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

2 (14.5 oz) cans diced tomatoes (with juice)

2 (15 oz) cans kidney beans, drained and rinsed

1 (15 oz) can black beans, drained and rinsed

1 cup beef broth (low sodium)

2 tbsp chili powder

1 tbsp cumin

1 tbsp smoked paprika

1 tsp dried oregano

1 tsp salt (adjust to taste)

1/2 tsp black pepper

1/2 tsp cayenne pepper (optional, for heat)

2 tbsp olive oil

Optional toppings: shredded cheese, sour cream, diced green onions, avocado, tortilla chips

Instructions
 

Sauté the Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Then add the minced garlic, red bell pepper, and green bell pepper. Cook for an additional 3-4 minutes until the peppers soften.

    Brown the Beef: Push the vegetable mixture to the sides of the pot and add the ground beef in the center. Cook until browned, breaking it up with a wooden spoon, about 6-8 minutes. Drain excess fat if necessary.

      Add the Spices: Stir in the chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne pepper (if using). Cook for 1-2 minutes until the spices are fragrant.

        Incorporate Tomatoes and Beans: Pour the canned diced tomatoes (with juices), the drained kidney beans, black beans, and beef broth into the pot. Stir well to combine.

          Simmer the Chili: Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for at least 30 minutes (or up to an hour for deeper flavors), stirring occasionally.
