2 boneless, skinless chicken breasts (about 1 lb)

1 tablespoon olive oil

1 medium apple (preferably honeycrisp or granny smith), cored and sliced

1 small onion, thinly sliced

2 cloves garlic, minced

1 teaspoon fresh sage, chopped (or ½ teaspoon dried sage)

½ teaspoon cinnamon

¼ teaspoon salt

¼ teaspoon black pepper

½ cup chicken broth

2 tablespoons apple cider vinegar

Fresh sage leaves for garnish (optional)

Instructions
 

Heat the Skillet: In a large skillet, heat the olive oil over medium heat.

    Sear the Chicken: Season the chicken breasts with salt, pepper, and cinnamon on both sides. Add them to the skillet and sear for about 3-4 minutes on each side until golden brown. Remove chicken from the skillet and set aside.

      Sauté the Aromatics: In the same skillet, add the sliced onion and apple. Sauté for 2-3 minutes until the onion is translucent and the apple starts to soften. Add the minced garlic and sage, and cook for another minute until fragrant.

        Deglaze the Skillet: Pour in the chicken broth and apple cider vinegar, scraping any browned bits from the bottom of the skillet. Let the mixture simmer for 1 minute.

          Simmer the Chicken: Return the chicken breasts to the skillet, spooning some of the apple and onion mixture on top. Cover the skillet and simmer for an additional 4-5 minutes, or until the chicken is cooked through (internal temperature reaches 165°F).

            Finish & Serve: Once cooked, remove the skillet from heat and let it rest for a minute. Garnish with fresh sage leaves if desired. Serve warm with your favorite sides!
