Fall Crockpot Sausage and Sweet Potato Stew

1 lb (450g) Italian sausage (mild or spicy, based on preference)

2 medium sweet potatoes, peeled and diced into 1-inch cubes

1 medium onion, diced

3 cloves garlic, minced

3 carrots, sliced

2 celery stalks, diced

1 red bell pepper, chopped

4 cups low-sodium chicken broth

1 can (15 oz) diced tomatoes, with juice

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon smoked paprika

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

2 cups fresh spinach (optional)

Fresh parsley, chopped for garnish

Brown the Sausage: In a skillet over medium heat, add the Italian sausage. Cook until browned and cooked through, breaking it apart with a spoon. Drain excess fat if necessary and transfer the sausage to the crockpot.

    Prepare Vegetables: Add the diced sweet potatoes, onion, garlic, carrots, celery, and red bell pepper to the crockpot with the sausage.

      Add Liquid and Seasoning: Pour in the chicken broth and add the canned diced tomatoes (with their juice). Stir in the dried thyme, oregano, smoked paprika, salt, and black pepper. Mix well to combine all ingredients.

        Crockpot Cooking: Cover the crockpot and set it to cook on low for 6-8 hours or high for 3-4 hours until the sweet potatoes are tender.

          Add Fresh Spinach: About 30 minutes before serving, stir in the fresh spinach if using. Cover and let it wilt into the stew.
