2 slices of hearty bread (sourdough or whole grain works well)

2 large eggs

2 slices of sharp cheddar cheese

4 slices of crispy bacon or turkey bacon

1 tablespoon butter (for toasting)

Salt and pepper (to taste)

Fresh spinach or arugula (optional, for added greens)

Hot sauce (optional, for serving)

Instructions
 

Prepare the Bread: Using a round cookie cutter or the rim of a glass, cut a hole about 2-3 inches in diameter in the center of each bread slice. Save the cut-out bread for later use (it's great for dunking!).

    Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels, leaving the bacon drippings in the skillet for added flavor.

      Toast the Bread: In the same skillet with the bacon drippings, melt the butter over medium heat. Once melted, place the bread slices on the skillet and toast for about 2 minutes on one side, until golden brown.

        Add the Eggs: Flip the bread slices over and crack an egg into each hole. Season with salt and pepper. Allow the eggs to cook for about 2-3 minutes for a runny yolk or longer if you prefer it more set.

          Add Cheese and Bacon: Once the eggs have started to cook, carefully place a slice of cheddar cheese over each egg. Add two slices of bacon on top of the cheese. Cover the skillet with a lid for 1-2 minutes to melt the cheese completely.

            Build the Sandwich: Remove the first slice of bread with egg and cheese from the skillet and top it with fresh spinach or arugula, if using. Place the second slice on top, egg side facing down, to form a sandwich.

              Serve: Remove from the skillet, cut in half if desired, and serve hot with hot sauce for an extra kick!
