2 medium zucchinis, grated (about 2 cups)

1 cup all-purpose flour

1 cup whole wheat flour

1 teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ cup granulated sugar

½ cup brown sugar, packed

3 large eggs

½ cup vegetable oil (or melted coconut oil)

1 teaspoon vanilla extract

½ cup chopped walnuts or pecans (optional)

½ cup raisins or chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.

    Prepare the Zucchini: Wash and dry the zucchinis. Grate them using a box grater or food processor. Squeeze out excess moisture with a clean kitchen towel or paper towels. Set aside.

      Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, whole wheat flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Whisk together until well mixed.

        Combine Wet Ingredients: In a separate bowl, beat the sugars, eggs, vegetable oil, and vanilla extract until smooth and creamy.

          Incorporate Zucchini: Stir the grated zucchini into the wet mixture. If using walnuts, pecans, raisins, or chocolate chips, fold them into the mixture at this stage.

            Combine Mixtures: Gradually add the dry ingredients to the wet zucchini mixture, stirring just until combined. Do not overmix; a few lumps are okay.

              Pour into Pan: Pour the batter into the prepared loaf pan, spreading it evenly.

                Bake: Place in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

                  Cool: Once baked, remove from oven and let it cool in the pan for about 10 minutes. Then transfer the loaf onto a wire rack to cool completely.

                    Slice & Serve: Once cooled, slice the bread into wraps or enjoy as is!
