2 cans (15 oz each) white beans (cannellini or Great Northern), rinsed and drained

1 tablespoon olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 green bell pepper, chopped

2 carrots, diced

2 celery stalks, diced

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

1 teaspoon dried oregano

4 cups chicken or vegetable broth

1 cup frozen corn

1 can (4 oz) diced green chilies (mild or spicy, based on preference)

Salt and pepper to taste

Fresh cilantro or parsley, chopped (for garnish)

Optional toppings: sour cream, avocado slices, lime wedges, shredded cheese

Instructions
 

Sauté the Veggies: In a large pot over medium heat, heat the olive oil. Add the chopped onion and cook until translucent, about 4-5 minutes. Stir in the minced garlic and cook for another 1-2 minutes, until fragrant.

    Add in Vegetables: Mix in the chopped green bell pepper, diced carrots, and diced celery. Sauté for 5-7 minutes until the vegetables are tender.
