Easy Taco Wraps with Ground Turkey Filling

Ingredients
  

1 lb ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon taco seasoning

1/2 cup black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 medium tomato, diced

1/2 cup shredded lettuce

1/2 cup shredded cheese (cheddar or Mexican blend)

4 large flour tortillas

Optional toppings: sour cream, guacamole, salsa, jalapeños, chopped cilantro

Instructions
 

Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent (about 3-4 minutes). Then, add the minced garlic and cook for an additional minute until fragrant.

    Add the Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Break it apart with a spatula and cook until browned and cooked through, about 5-7 minutes.

      Season the Filling: Sprinkle the taco seasoning over the cooked turkey. Stir in the black beans and corn, mixing thoroughly. Cook for another 2 minutes until everything is heated through and combined. Remove from heat.

        Assemble the Wraps: Lay a tortilla flat on a clean surface. Spoon a generous amount of the turkey filling into the center of the tortilla, then add diced tomato, shredded lettuce, and cheese on top.

          Wrap it Up: Fold in the sides of the tortilla and then roll it up tightly from the bottom to enclose the filling. Repeat with the remaining tortillas and filling.

            Optional Toasting: For a crispy touch, you can toast the wraps in a dry skillet over medium heat for 2-3 minutes on each side, or until golden brown.

              Serve: Cut the wraps in half diagonally and serve with optional toppings like sour cream, guacamole, salsa, jalapeños, or chopped cilantro for added flavor. Enjoy!
