Easy Taco Rice Bowl with Avocado and Lime

1 cup long-grain rice

2 cups chicken or vegetable broth

1 tablespoon olive oil

1 pound ground beef or turkey

1 packet taco seasoning (or homemade blend)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, canned, or frozen)

1 medium red bell pepper, diced

1 medium onion, diced

1 cup cherry tomatoes, halved

1 ripe avocado, sliced

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Tortilla chips (optional, for crunch)

Instructions
 

Cook the Rice: In a medium saucepan, bring the chicken or vegetable broth to a boil. Add the rice, reduce the heat to low, and cover. Allow to simmer for about 18-20 minutes or until the rice is tender and the liquid is absorbed. Remove from heat and set aside.

    Prepare the Meat: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and red bell pepper. Sauté for about 3-4 minutes until they start to soften.

      Add Ground Meat: Add the ground beef or turkey to the skillet. Cook, breaking it up with a spatula, until browned and cooked through. Drain excess fat if necessary.

        Season the Meat: Stir in the taco seasoning, black beans, corn, and cherry tomatoes. Mix well, and let it cook for an additional 4-5 minutes until heated through. Season with salt and pepper to taste.
