1 medium spaghetti squash

2 tablespoons olive oil

Salt and pepper, to taste

1 cup heavy cream

1 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 teaspoon nutmeg (optional)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Spaghetti Squash: Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the insides with olive oil, and season generously with salt and pepper.

      Roast the Squash: Place the squash halves cut-side down on a baking sheet lined with parchment paper. Roast in the preheated oven for about 30-40 minutes, or until the flesh is tender and easily pulls apart with a fork.

        Make the Alfredo Sauce: While the squash is roasting, heat a saucepan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring it to a gentle simmer.
