Easy Shrimp Tacos with Cabbage Slaw

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon cumin

Salt and pepper to taste

8 small corn or flour tortillas

2 cups shredded green cabbage

1 cup shredded red cabbage

1 carrot, grated

1/2 cup cilantro, chopped

1/4 cup lime juice (about 2 limes)

1 avocado, diced

Hot sauce (optional, for serving)

Lime wedges (for serving)

Instructions
 

Prepare the Shrimp: In a bowl, combine the shrimp, olive oil, garlic powder, smoked paprika, cumin, salt, and pepper. Toss the shrimp until evenly coated. Let marinate for about 15 minutes while you prepare the slaw.

    Make the Cabbage Slaw: In a large mixing bowl, combine the green cabbage, red cabbage, grated carrot, cilantro, and lime juice. Toss until well incorporated. Taste and adjust seasoning if needed.

      Cook the Shrimp: In a skillet over medium-high heat, add the marinated shrimp. Cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat.

        Warm the Tortillas: In a separate skillet, warm the tortillas for about 30 seconds on each side until they are pliable. Alternatively, you can wrap them in a damp paper towel and microwave for about 30 seconds.

          Assemble the Tacos: On each tortilla, add a generous amount of the cabbage slaw followed by a few shrimp. Top with diced avocado and a drizzle of hot sauce if desired.
