1 pound Italian sausage (links or patties)

2 cups broccoli florets

1 bell pepper (red, yellow, or green), sliced

1 medium red onion, sliced

2 cups baby potatoes, halved (or fingerling potatoes, halved)

4 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon dried Italian herbs (basil, oregano, thyme)

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish, optional)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Vegetables: In a large mixing bowl, combine the broccoli florets, sliced bell pepper, sliced red onion, and halved baby potatoes. Drizzle with 2 tablespoons of olive oil, then add the minced garlic, Italian herbs, smoked paprika, salt, and pepper. Toss well to coat the vegetables evenly.

      Prepare the Sausage: If using sausage links, slice them into 1-inch pieces. If using patties, crumble them into bite-sized pieces. Add the sausage to the vegetable mixture and toss to combine.

        Arrange on Sheet Pan: Line a large baking sheet with parchment paper for easy cleanup. Spread the sausage and vegetable mixture evenly on the sheet. Make sure to leave some space between the pieces for even roasting.
