4 large russet potatoes, peeled and diced

6 strips of bacon, chopped

1 medium onion, finely chopped

2 cloves garlic, minced

4 cups chicken or vegetable broth

1 cup heavy cream

1 cup shredded cheddar cheese

1 teaspoon dried thyme

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Cook the Bacon: In a large pot, over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove the bacon from the pot, leaving about 2 tablespoons of bacon grease in the pot for flavor. Set the bacon aside to drain on paper towels.

    Sauté Vegetables: In the same pot, add the chopped onion and cook until translucent, about 3-4 minutes. Add minced garlic and sauté for an additional minute, until fragrant.

      Add Potatoes and Broth: Stir in the diced potatoes, dried thyme, and cooked bacon (reserving some for garnish). Pour in the chicken or vegetable broth, ensuring that the potatoes are fully submerged. Bring to a boil.
