4 cups fresh peaches, peeled and sliced

1 cup fresh raspberries

1/2 cup granulated sugar, divided

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 teaspoon lemon juice

1 cup all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup milk

1/3 cup unsalted butter, melted

1 teaspoon cinnamon (optional)

Vanilla ice cream (for serving, optional)

Instructions
 

Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish or an equivalent size casserole dish.

    Prepare the fruit filling: In a large bowl, combine the sliced peaches and raspberries. Gently toss in 1/4 cup of sugar, cornstarch, vanilla extract, and lemon juice. Allow the mixture to sit for 10-15 minutes to release the fruit juices.

      Arrange the fruit: Pour the fruit mixture into the bottom of the greased baking dish, spreading it evenly.

        Make the batter: In a separate bowl, whisk together the flour, baking powder, salt, and remaining 1/4 cup of sugar. Slowly add the milk and melted butter, stirring until just combined. If desired, fold in cinnamon for extra flavor.

          Top the fruit: Pour the batter over the fruit filling in the baking dish, spreading it evenly with a spatula. It’s okay if some fruit peeks through.

            Bake the cobbler: Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.

              Cool and serve: Remove from the oven and allow the cobbler to cool for about 10-15 minutes. Serve warm, with a scoop of vanilla ice cream on the side if desired.
