4 (6 oz) salmon fillets

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 tablespoon Dijon mustard

1 tablespoon honey

1 lemon, zested and juiced

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

    In a small bowl, whisk together the olive oil, minced garlic, dried oregano, dried thyme, Dijon mustard, honey, lemon zest, and half of the lemon juice. Mix until well combined.

      Season the salmon fillets with salt and pepper on both sides and place them on the prepared baking sheet, skin-side down.

        Brush each fillet generously with the marinade mixture, ensuring that each piece is well coated. Reserve a small amount of the marinade for drizzling later.

          Bake the salmon in the preheated oven for 12-15 minutes or until the salmon flakes easily with a fork and is cooked to your liking. The internal temperature should reach 145°F (63°C).

            Once cooked, remove the salmon from the oven. Drizzle the reserved marinade over the fillets and the remaining lemon juice.
