Ingredients

For the Sweet Potato Fries:

2 large sweet potatoes

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon cornstarch

For the Dipping Sauce:

1/2 cup mayonnaise

1 tablespoon chipotle in adobo sauce (more or less to taste)

1 tablespoon lime juice

1 teaspoon honey (optional)

Salt to taste

Instructions

Prep the Sweet Potatoes:

Preheat your oven to 425°F (220°C). Peel the sweet potatoes and cut them into thin fry shapes, about 1/4 inch thick.

      Soak the Fries:

For extra crispiness, soak the cut sweet potatoes in cold water for at least 30 minutes. This helps to remove excess starch. After soaking, drain and pat them dry with a clean kitchen towel.

          Season the Fries:

In a large bowl, toss the dry sweet potatoes with olive oil, paprika, garlic powder, onion powder, salt, black pepper, and cornstarch. Ensure each fry is well coated for maximum crispiness.

              Arrange on Baking Sheet:

Line a baking sheet with parchment paper for easy cleanup. Spread the fries out in a single layer, making sure they aren't overcrowded, which can lead to sogginess.

                  Bake the Fries:

Bake in the preheated oven for 25-30 minutes, flipping halfway through, until they are golden brown and crispy. Keep an eye on them towards the end of the baking time to prevent burning.

                      Make the Dipping Sauce:

While the fries are baking, mix the mayonnaise, chipotle in adobo sauce, lime juice, and honey (if using) in a bowl. Adjust the spice level and salt according to your preference. Set aside.

                          Serve and Enjoy:

Once the fries are baked to perfection, remove them from the oven, let them cool for a minute, and serve with the zesty chipotle dipping sauce. Enjoy your delicious snack!
