2 cups cottage cheese (large curd)

6 large eggs

1 cup shredded cheddar cheese

1 cup chopped fresh spinach (or frozen, thawed)

1 small onion, finely chopped

1 clove garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional)

1 tablespoon olive oil or butter (for greasing the baking dish)

Fresh herbs for garnish (optional, e.g., parsley or chives)

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a baking dish (9x9 inches or similar) with olive oil or butter.

    Sauté the Vegetables: In a medium skillet, heat a bit of olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until soft. Add the minced garlic and chopped spinach. If using frozen spinach, make sure it's well-drained. Cook for another 2-3 minutes until the spinach is wilted. Remove from heat and let cool slightly.

      Mix the Base: In a large mixing bowl, combine the cottage cheese, eggs, shredded cheddar cheese, oregano, salt, black pepper, and red pepper flakes (if using). Whisk the mixture until it's well combined.

        Combine Ingredients: Gently fold in the sautéed onion and spinach mixture to the egg-cottage cheese blend. Make sure everything is evenly distributed.
