Easy Chicken & Zucchini Alfredo

2 boneless, skinless chicken breasts

2 medium zucchinis, spiralized

8 oz fettuccine or pasta of choice

1 cup heavy cream

1 cup freshly grated Parmesan cheese

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes for spice

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet over medium heat, add olive oil. Once hot, add the chicken breasts and cook for 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from the skillet and let rest for a few minutes, then slice them into strips.

      Sauté Garlic and Zucchini: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the spiralized zucchini and cook for about 3-4 minutes, just until tender but still slightly crisp.

        Make the Alfredo Sauce: Pour in the heavy cream, bringing it to a gentle simmer. Gradually whisk in the grated Parmesan cheese until melted and creamy. If the sauce is too thick, gradually add some reserved pasta water until the desired consistency is reached.

          Combine Everything: Add the drained pasta to the sauce, tossing to coat evenly. Gently mix in the cooked chicken and zucchini until everything is well combined and heated through.

            Serve: Plate the creamy Chicken & Zucchini Alfredo and garnish with chopped parsley. Sprinkle with red pepper flakes if you desire a little heat. Enjoy!
