Easy Chicken Fajitas with Bell Peppers

Ingredients
  

1 pound of boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 large onion, sliced

2 bell peppers (any color), sliced

Juice of 1 lime

8 small flour or corn tortillas

Optional toppings: sour cream, guacamole, salsa, shredded cheese, chopped cilantro

Instructions
 

Marinate the Chicken:

    In a bowl, combine sliced chicken, olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Toss to coat evenly. Cover and let it marinate in the fridge for at least 15 minutes while you prepare the vegetables.

      Sauté the Veggies:

        In a large skillet, heat a tablespoon of olive oil over medium heat. Add the sliced onions and bell peppers. Sauté for about 5-7 minutes, or until the vegetables are tender and slightly charred. Remove from the skillet and set aside.

          Cook the Chicken:

            In the same skillet, add another tablespoon of olive oil if needed and increase the heat to medium-high. Add the marinated chicken strips. Cook for about 6-8 minutes, stirring occasionally, until the chicken is cooked through and has a nice sear.

              Combine Ingredients:

                Once the chicken is cooked, return the sautéed bell peppers and onions back into the skillet. Squeeze the juice of 1 lime over the mixture and stir well to combine. Cook for an additional 1-2 minutes to heat everything through.

                  Warm the Tortillas:

                    In a dry skillet or microwave, warm the tortillas until they are pliable.

                      Serve:

                        Serve the chicken and vegetable mixture in the warm tortillas. Add your desired toppings, such as sour cream, guacamole, salsa, shredded cheese, or fresh cilantro.
