1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup corn kernels (fresh, frozen, or canned)

1 cup long-grain white rice

1 medium onion, diced

2 cloves garlic, minced

2 cups chicken broth

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

2 tablespoons olive oil

1 cup cherry tomatoes, halved (optional for freshness)

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the Oil: In a large skillet, heat the olive oil over medium-high heat. Add the diced onion and sauté for about 3 minutes until translucent.

    Add Chicken: Stir in the chicken pieces and season with smoked paprika, cumin, salt, and black pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
