Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1 cup milk

1/4 cup vegetable oil

1 large egg

1 1/2 cups shredded mozzarella cheese

1 cup sliced pepperoni

1/2 cup marinara sauce (for dipping)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a standard muffin tin or line it with muffin liners.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, garlic powder, and Italian seasoning until well combined.

Combine Wet Ingredients: In another bowl, whisk together the milk, vegetable oil, and egg. Ensure the mixture is well blended.

Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir until just combined; avoid overmixing.

Add Cheese and Pepperoni: Fold in the shredded mozzarella cheese and sliced pepperoni, reserving a few pieces of pepperoni for topping if desired.

Fill Muffin Tin: Spoon the batter into each muffin cup, filling them about 2/3 full. If you reserved pepperoni, place a few pieces on top of each muffin.

Bake: Bake in the preheated oven for 18-20 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack. Serve warm with marinara sauce on the side for dipping.
