12 small slider buns

8 large eggs

1 cup shredded cheddar cheese

1 cup cooked breakfast sausage, crumbled (or diced cooked bacon)

½ cup diced bell peppers (red, green, or mixed)

½ cup diced onion

¼ cup milk

Salt and pepper to taste

2 tablespoons butter

Optional: hot sauce for serving

Instructions
 

Prepare the Oven: Preheat your oven to 350°F (175°C).

    Sauté the Vegetables: In a skillet, melt the butter over medium heat. Add the diced bell peppers and onions. Sauté for about 5-7 minutes until the vegetables are soft and translucent. Set aside.

      Whisk the Eggs: In a large bowl, crack the eggs and add the milk. Season with salt and pepper. Whisk together until the mixture is fully combined.

        Cook the Eggs: In the same skillet, pour in the egg mixture. Cook gently, stirring occasionally, until the eggs are scrambled and cooked through, about 5-6 minutes. Remove from heat.

          Combine the Filling: In a large mixing bowl, add the scrambled eggs, cooked sausage (or bacon), sautéed vegetables, and shredded cheddar cheese. Mix well to combine all the ingredients.

            Assemble the Sliders: Slice the slider buns in half horizontally (keeping the tops and bottoms attached). Place the bottom halves on a baking sheet. Spoon the egg and sausage mixture evenly over the bottom halves of the buns. Place the top halves back on each slider.

              Bake the Sliders: Bake in the preheated oven for 10-12 minutes, or until the sliders are heated through and the cheese has melted.

                Serve: Remove from the oven, let cool for a minute, and serve warm. Optional: drizzle with hot sauce for an extra kick!
