Easy Breakfast Quesadillas

Ingredients
  

4 large flour tortillas

1 cup shredded cheddar cheese

1 cup scrambled eggs (about 4 large eggs)

1/2 cup cooked and crumbled breakfast sausage (or diced cooked bacon)

1/4 cup diced bell peppers (any color)

1/4 cup chopped green onions

Salt and pepper, to taste

1 tablespoon olive oil or butter

Salsa, guacamole, or sour cream for serving

Instructions
 

Prepare the Eggs: In a medium bowl, whisk together the eggs, salt, and pepper. Then scramble them in a non-stick skillet over medium heat until just set. Remove from heat and set aside.

    Combine Ingredients: In a large mixing bowl, combine the scrambled eggs, cooked breakfast sausage, diced bell peppers, and chopped green onions. Stir until well mixed.

      Assemble Quesadillas: Lay a tortilla flat on a clean surface. Sprinkle half of the tortilla with a generous amount of shredded cheddar cheese. Spread a portion of the egg mixture on top of the cheese, then sprinkle with a little more cheese before folding the tortilla in half. Repeat with remaining tortillas and filling.

        Cook the Quesadillas: Heat olive oil or butter in a large skillet over medium heat. Place one or two quesadillas in the skillet (depending on size). Cook for about 3-4 minutes on each side, or until golden brown and the cheese has melted. Repeat with the remaining quesadillas.

          Slice and Serve: Once cooked, remove the quesadillas from the skillet and let them cool slightly. Cut each quesadilla into wedges and serve warm with salsa, guacamole, or sour cream on the side for dipping.
