8 oz (about 2 cups) rotini or fusilli pasta

6 slices of bacon, cooked and crumbled

2 cups cherry tomatoes, halved

1 cup cucumber, diced

1 cup shredded romaine lettuce

1/2 cup red onion, finely chopped

1/2 cup mayonnaise

1 tablespoon apple cider vinegar

1 teaspoon Dijon mustard

Salt and pepper to taste

Optional: Fresh basil or parsley for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package directions until al dente. Drain and rinse under cold water to cool; drain again and set aside.

    Prepare the Bacon: While the pasta is cooking, in a skillet over medium heat, cook the bacon until crispy. Remove from skillet and drain on paper towels. Once cooled, crumble the bacon into bite-sized pieces.

      Mix the Dressing: In a small bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, salt, and pepper until smooth and well combined.

        Combine Ingredients: In a large mixing bowl, combine the cooked pasta, crumbled bacon, halved cherry tomatoes, diced cucumber, shredded romaine lettuce, and chopped red onion.

          Add the Dressing: Pour the dressing over the pasta mixture and toss gently until all the ingredients are well coated.

            Chill and Serve: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Before serving, give it a gentle stir and garnish with fresh basil or parsley if desired.
