Easy Beef and Bean Quesadillas for Busy Nights

1 pound ground beef

1 can (15 oz) black beans, rinsed and drained

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 small onion, diced

2 cloves garlic, minced

1 tablespoon taco seasoning (or your favorite spices)

1 teaspoon olive oil

4 large flour tortillas

Salsa and sour cream for serving

Fresh cilantro, chopped (optional for garnish)

Instructions
 

Cook the Beef: In a large skillet over medium heat, heat the olive oil. Add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it up with a spatula, about 5-7 minutes.

    Add Beans and Seasoning: Stir in the black beans and taco seasoning; mix well and cook for about 2-3 more minutes, allowing the flavors to meld. Remove from heat.

      Assemble the Quesadillas: On one half of each tortilla, sprinkle a layer of both cheeses. Top with a generous scoop of the beef and bean mixture, then sprinkle a little more cheese on top. Fold the other half of the tortilla over to create a half-moon shape.

        Cook the Quesadillas: Wipe the skillet clean and return it to medium heat. Place the folded quesadilla in the skillet and cook for 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted.

          Serve and Enjoy: Remove the quesadilla from the skillet and let it rest for a minute. Cut into wedges and serve with salsa, sour cream, and sprinkle fresh cilantro on top for an extra burst of flavor.
