Easy Basil & Roasted Tomato Soup Recipe

4 cups fresh ripe tomatoes, halved (about 1.5 lbs)

1 medium onion, chopped

4 cloves garlic, minced

2 tablespoons olive oil

Salt and black pepper, to taste

2 cups vegetable or chicken broth

1 cup fresh basil leaves, packed

1 tablespoon balsamic vinegar

1 teaspoon sugar (optional, to balance acidity)

½ cup heavy cream or coconut milk (optional for creaminess)

Fresh basil sprigs and croutons for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Tomatoes: On a baking sheet, arrange the halved tomatoes cut side facing up. Add the chopped onion and minced garlic around the tomatoes. Drizzle with olive oil, and season with salt and black pepper.

      Roast the Veggies: Roast in the oven for about 30-35 minutes, or until the tomatoes are caramelized and lightly browned.

        Blend the Soup: Remove the baking sheet from the oven and let it cool for a few minutes. Transfer the roasted tomatoes, onions, and garlic to a blender. Add in the vegetable or chicken broth, fresh basil leaves, balsamic vinegar, and sugar (if using).

          Puree Until Smooth: Blend on high until the mixture is completely smooth. If you prefer a chunkier texture, pulse it a few times instead.

            Heat & Add Cream: Pour the blended soup into a pot over medium heat. If you're using heavy cream or coconut milk for added creaminess, stir it in now, and let the soup simmer for about 5-10 minutes to heat through.

              Taste and Adjust: Taste the soup for seasonings and adjust with more salt, pepper, or balsamic vinegar if desired.

                Serve: Ladle the soup into bowls and garnish with fresh basil sprigs and croutons, if desired. Enjoy your vibrant bowl of deliciousness!
