Ingredients
  

2 medium tart apples (Granny Smith or Honeycrisp), peeled and diced

1/4 cup brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1 tablespoon lemon juice

1 tablespoon cornstarch

10 egg roll wrappers

Oil for frying (vegetable or canola)

Powdered sugar (for dusting)

Caramel sauce (for drizzling, optional)

Instructions
 

Prepare the Filling:

    In a medium bowl, combine the diced apples, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Mix well until the apples are evenly coated. Let the mixture sit for about 10 minutes to allow the flavors to meld.

      Assemble the Egg Rolls:

        Place an egg roll wrapper on a clean surface, with one corner facing you. Spoon about 2-3 tablespoons of the apple filling onto the center of the wrapper.

          Roll it Up:

            Fold the bottom corner over the filling, then fold in the sides. Roll the wrapper away from you to form a tight roll. Make sure to seal the edges with a little water if necessary. Repeat the process with the remaining wrappers and filling.

              Heat the Oil:

                In a deep pan or fryer, heat about 2 inches of oil to 350°F (175°C). You can test if the oil is ready by dropping a small piece of dough into the oil; if it bubbles actively, it’s ready!

                  Fry the Egg Rolls:
